Smoothie Sunrise

 What's better after a tough workout than an ice-cold smoothie? Well, I could name a few things, like eggs and waffles with peanut butter. It's a great way to knock out your fruit servings in one easy drink. 

I used to love Jamba Juice. The smoothies are filling enough to act as a meal. I stuck with the trusty Orange-a-Peel; a mix of orange juice, strawberries, bananas and frozen yogurt.
 
 I swapped the frozen yogurt for Lite Vanilla Yogurt. This Anderson Erickson yogurt has only 110 calories with 12 grams of sugar and 9 grams of protein.

 I always just eyeball the amount of orange juice and fill it up with frozen strawberries and bananas. Spoon in the yogurt and blend it all up.
These are great to drink on the go. Or you can easily freeze half for later.

Chicken and Pasta

You will soon discover that I love chicken. I probably eat it at least 4 times a week. It's just so easy to take a piece out of the freezer, throw some Italian dressing on it, and grill it on the Foreman for a few minutes. Viola! Dinner is served.

I had some leftover Chicken Piccata from the other night and vegetables that will go bad if I don't start eating them. My master plan: boiling some water, cook pasta, throw in vegetables and chicken, and eat.
My spectacular pasta dinner:
- Pasta (I used penne but anything works)
- your favorite tomato sauce (I used Bertolli Tomato & Basil, but honestly wasn't impressed)
- grape tomatoes
- mushrooms
- garlic cloves

While the pasta is cooking, heat a skillet with olive oil and a little garlic. Cook the vegetables until they are soft; add chicken.

Once the pasta is cooked, you're done!

Cooking 101

It's time. I'm trying something new. Not only am I giving this whole blogging frenzy a shot, I'm going to try teaching myself how to cook. No more campus dining or frozen dinners. No more Ramen or Chef Boyardee. It's time to be a big girl. Now don't get me wrong; I'm a pro at cooking on a George Foreman. But it's time to experiment with the dynamic duo - the oven and stove.

The whole purpose of this to find quick and easy meals that I can fit into my hectic college lifestyle. It's not easy finding something healthy to eat between classes, work, and rowing practice. But that's all part of the challenge!

Start dusting off those pots and pans!
